This dazzling, fluffy and vegan wholemeal spelt cake is super easy to make, check out the recipe below:
4 tbsp melted coconut oil/or olive oil
2 tbsp coconut yogurt/or any plant yogurt
100g coconut sugar
1 tsp vanilla extract
1 cup almond milk
1 cup orange juice
200g wholemeal spelt flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
pinch of salt
1 tbsp chia seeds
Cherries and almond flakes (you can also use raspberries instead of cherries)
Preheat oven to 180C. In food processor mix oil, sugar, yoghurt . Then add vanilla essence, milk and orange juice, mix until well combined. Now add all dry ingredients and mix well. Transfer to a small brownie pan lined with baking paper, top with cherries and almond flakes and bake for 25-30 minutes until golden brown on top.
Enjoy with custard, ice cream, single cream or on its own!
