These vegan blackberry crumble bars are a wonderfully tasty desert! Eat them plain or with vanilla ice cream for a delicious treat!
Ingredients:
3 cups oats
1/2 cup rye flour (or all purpose flour)
1/2 cup sugar
1/4 salt
1 cup vegan butter spread
1 tbsp flax
1 tbsp Wellness Lab berry latte
Method:
Pre-heat the oven to 180°. Line up 8x8 pan with parchment paper so that it hangs over two sides.
Put oats, flour, vegan buttery spread, sugar, flax, berry blend, and salt in the food processor, blend until it resembles large crumbs.
Place half of the crumble mixture in the bottom of the prepared pan, use your hands to pat it down firmly.
Bake the bottom crust at 180° for 15 minutes. Remove from oven.
Put the blackberries on top of the crust, distribute evenly.
Top with the remaining crumble mixture, patting it down lightly.
Bake at 180° for 30-35 minutes, until the berries are bubbling and the crumb topping is golden brown.
If you plan to slice those into neat bars then be sure to let it cool completely.
Otherwise you can use a spoon to scoop it out and enjoy it while it is warm.
Recipe notes:
Store any leftover bars in the refrigerator. They will keep well for about five days (although I think you will eat them all before then!) You could also freeze the leftovers. If you don’t have blackberries, try this recipe with raspberries or blueberries.
